But when I tried Ippudo in Japan, that bowl of ramen completely changed my perspectives on it. But... Shigemi Kawahara — who operates Hakata IPPUDO shops that serve ramen in pork-based broth — is fascinated by the appeal of ramen. In 1985, he founded IPPUDO in Fukuoka. He was 31 years old — a late start for a ramen master. Mr. Kawahara says, “Back then, people believed that only grungy shops could serve delicious ramen. But I opened a cool new-style shop — a chic ramen place even for solo women customers.” In a few years, this tiny 36.4m2 ramen shop with seating for only 18 customers grew into a popular spot with a long waiting line. Typical ramen ingredients include noodles, soup, and chashu roast pork with toppings like sliced green onion. Mr. Kawahara says, “You can be a ramen craftsman only when you’re capable of making noodles, soup, and chashu.” He adds, “Ultra-thin noodles go well with thick pork-based soup. Ippudo uses low-water-content noodles that allow enjoyment of wheat flour flavor and chewy texture.” According to Mr. Kawahara, Ippudo noodles tend to be chewy. He recommends adding ground and unground sesame seeds (from a lidded container at the table), topped with freshly ground black pepper and crushed raw garlic. If you order a kae-dama (extra serving of noodles), it’s better to do so before you completely finish your noodles in the soup.

The rich and fragrant tonkotsu broth is cooked for over 18 hours and then left to "mature" for 24 hours to extract the pleasant, savory taste of pork. It is served with homemade Hakata-style thin and straight noodles which match with the broth perfectly. The ‘red’ Akamaru Modern ramen has a more intense and memorable soup base. The special blended miso paste and fragrant oil bring harmony and depth to the flavor of this bowl of ramen. The Shiromaru Classic ramen had the edge flavor wise, however. The Hakata Gyoza makes an excellent accompaniment, about a third smaller in size than the usual dumplings, still crispy and very juicy and moist on the inside, best eaten hot. 1: Open lid to the half end, pick up the bags of “powder soup”, “liquid soup”, “flavor sauce (spicy miso & black soy sauce)”, “roasted pork”, and “garnish”. 2: Put roasted pork and garnish, pour boiling water to indicated line of the bowl, and cover the lid. 3: Put the bags of liquid soup and flavor sauce on the lid, and warm them. 4: 3 minutes later, detangle noodles, pour powder soup and liquid soup, stir well. 5: Finally, pour flavor sauce (spicy miso & black soy sauce) and serve.
