This meal includes scallion chicken, a beautiful, healthy vegetable soup, and rice, enough to serve a 3 member family. It is delicious, healthy, budget-friendly, and easy to make. INGREDIENTS (Serves 4) MAKE THE SHALLOT & SCALLION CHICKEN 2 chicken legs, about 2 lb / 907g 1.2L / 5 cups of water 2.5 inches of ginger, sliced thinly 4 scallions 2 shallots, sliced thinly 3-4 tbsp of oil 2 tbsp of soy sauce (Amazon Link - 🤍 2 tbsp of oyster sauce (Amazon Link - 🤍 1.5 tsp of sugar Dice scallions as garnish MAKE THE TOMATO EGG & TOFU SOUP 2 tomatoes, cut into bite-size pieces 2 eggs, whisk well 227g / 0.5lb of tofu A hand full of green leafy vegetables 1.2L / 5 cups of chicken stock 1¼ tsp of salt White pepper to taste MAKE THE RICE 2 cups of jasmine rice (Amazon Link - 🤍 3 cups of water INSTRUCTIONS Add chicken leg quarters, ginger slices, scallions, and 1.2L / 5 cups of water to a stock pot and bring it to a boil over medium heat. If you don’t like dark meat, use the same amount of chicken breast and 5 cups of chicken broth instead of water. Meanwhile, wash the rice under running water several times and drain thoroughly. Add 2 cups of water and 3 cups of water to a pot and bring it to a simmer over medium heat. Put on the lid and turn the heat to low. Simmer the rice for 18 minutes. If you don’t know how to cook rice, check out this guide. Check back on the chicken leg quarters. It should have come to a boil by now. Turn the heat to low and let it simmer for 8 minutes. Turn off the heat and let the chicken sit in the hot water for 15 minutes. Understanding the recipe and using the fragmented time is the key to creating a faster cooking flow. That is why you see me alternately timing and working between the rice and the chicken. While waiting, we will work on the scallion sauce, which is the flavor component of this meal. Slice 1 inch of ginger thinly; slice 2 scallions diagonally into 1/2 inch pieces; Quarter 2 shallots; peel the outer layers; then slice them thinly. Add cooking oil to a saucepan, along with the ginger slices, scallions, and shallots. Stir over medium-low heat for a few minutes or until the aromatics are golden. Separate the aromatics and the oil by pouring them through a sieve. Reserve the crispy goodness on the side. Add the oil back to the pan long with soy sauce, oyster sauce, and sugar. Mix over low heat until the seasoning is condensed. Turn off the heat and set the sauce aside. Check the chicken by poking the thickest part with a fork. If there is not pink juice leaking out, the chicken is completely cooked through. Transfer the chicken into an ice bath to stop the cooking process. Remove the scallions and ginger slices from the pot. Then put the chicken broth back onto the stove and heat it over medium heat. Meanwhile, cut 2 tomatoes into bite-size pieces; cut half a package of tofu into cubes. Add them to the chicken broth and boil for a minute or 2. Crack two eggs and whisk them well. Drizzle it into the chicken broth. Last, chop a handful of green leafy vegetables into 2-inch stalks and stir them into the broth. Seaon the soup with 1¼ tsp of salt and some white pepper to taste. Set the soup aside. The chicken should be done chilling. Take it out of the ice bath and use paper towels to wipe the excess water. Debone the chicken and cut the meat into bite size pieces. You can remove the skin if you want but as a native Cantonese, I love the texture of the skin so I will keep it. Place the chicken on a serving plate. Drizzle in the scallion sauce all over and garnish with some diced scallions. By now, the rice should be done. Turn off the heat and fluff the grains. Garnish the rice with the reserved crispy aromatics. Serve the rice, soup, and chicken together.

This Sticky Chinese Pork Belly is one of my absolute favourite recipes. Free printable recipe is available on our site: 🤍 Servings 4-6 servings Ingredients: Slow-Cooked Pork Belly: 2.2 lb (1Kg) rindless pork belly slices chopped in half (each piece being approx. the length of your index finger) 4 1/4 cups (1 Litre) hot chicken/veg stock 1 thumb sized piece of ginger peeled and finely chopped (or 1 tbsp of minced ginger) 3 cloves garlic peeled and chopped in half 1 tbsp. rice wine 1 tbsp. caster sugar Glaze: 2 tbsp vegetable oil pinch of salt and pepper 1 thumb-sized piece of ginger peeled and minced 1 red chilli finely chopped 2 tbsp Honey 2 tbsp brown sugar 3 tbsp dark soy sauce 1 tsp lemon grass paste To Serve: Boiled rice Green Vegetables Instructions: 1. Add all the slow-cooked pork belly ingredients to a pan (not the glaze ingredients) I use a cast iron casserole pan. 2. Bring to the boil, then place a lid on, turn down the heat and simmer for 2 hours. 3. Turn off the heat and drain the pork. You can reserve the liquid if you like (Perfect for a Thai or Chinese noodle soup). 4. Chop the pork into bite sized chunks. Add 1 tbsp. of the oil to a frying pan, and then mix the remaining glaze ingredients in a small bowl. 5. Heat the oil and add in the pork, salt and pepper, frying on a high heat until the pork starts to turn golden. 6. Now pour the glaze over the pork and continue to cook until the pork looks dark and sticky. 7. Remove from the heat and serve. Notes Can I make it ahead? Yes, you can make it up to the end of step 2 (where the pork is slow cooked and then drained). Then quickly cool, cover and refrigerate (for up to two days) or freeze. Defrost in the refrigerator overnight before slicing and frying the meat. You can also make the sauce ahead, then cover and refrigerate it up to a day ahead. Can I make it Gluten free? Yes! Replace the soy sauce with tamari. I've done this several times and it works great.Replace the rice wine with sherry (usually gluten free, but best to check).Also make sure you use gluten free stock. Can I use my slow cooker? Yes, you can do the first stage in the slow cooker. Cook on high for 4-5 hours or low for 6-7 hours. You don't even need to turn on your stove. If you want to make this salad ahead of time, keep the cucumber and the dressing separate in the fridge and mix them right before serving. This is the best cucumber salad because the smashing creates many bruises and allows the seasonings to infuse into the cucumber. INGREDIENTS 350 grams of cucumber, smashed 3/4 tsp of salt 2 cloves of garlic, grated 2-3 pieces of Thai bird eye chilies, diced 2-3 tbsp of diced cilantro, diced 1 tbsp of soy sauce (Amazon Link - 🤍 1 tbsp of Chinese black vinegar or apple cider vinegar (Amazon Link - 🤍 1 tbsp of hot chili oil 1/2 tsp of sugar 1 tsp of sesame oil (Amazon Link - 🤍 INSTRUCTIONS Smash the cucumber with a heavy-duty cleaver until the cucumber starts to split along the length. Then cut the cucumber diagonally into 2 inches long pieces. If you don't have a cleaver, please use a rolling pin, a meat tenderizer, or your fist. It is best to use cucumbers that have thin skin and tender seeds; otherwise, you have to remove the seeds and peel the skin for better texture. Season the cucumber with salt for 15 minutes to draw out some moisture. Then, squeeze the cucumber and discard the excess liquid. To make the dressing, combine the grated garlic, cilantro,Thai bird eye chilies, soy sauce, hot chili oil, vinegar, sugar, and sesame oil. Mix the cucumber with the dressing and toss thoroughly. For authenticity, we use Chinese black vinegar. However, considering it is not easy to find outside China, apple cider vinegar will be the best option as the slight fruity flavor accomplishes the cucumber well.

Chow mein recipe | how to make perfect chow mein at home RECIPE (2 servings) INGREDIENTS: 1/2 small cabbage 5 green onions/spring onions 2 carrots 300g/11 oz noodles (preferably egg noodles) 4 tbsp oil —sauce— 1.5 tbsp light soy sauce 1 tbsp dark soy sauce 1 tbsp oyster sauce (regular or vegetarian) 3 cloves garlic grated 1 tsp sugar 2 tbsp water METHOD: 1. Thinly slice cabbage, carrots and white part of the green onions/spring onions. Slice the green part into 2 inch thick pieces 2. Mix sauce ingredients in a bowl before hand. This will make it easier while stir frying 3. Boil water and cook noodles 2 mins less than the package instructions. The noodles will cook further while stir frying so it’s important to undercook them 4. Strain the noodles and dunk it into cold water or rinse them until they are cold. This helps making the noodles stop cooking immediately. Strain out excess water and coat in some oil to prevent it from sticking 5. Heat a wok/pan on high heat and add some oil. Add the carrots and stir fry for 1 min 6. Next add the cabbage and stir fry for 1 min 7. Next add the white part of green onion/spring onions and mix well 8. Spread the veggies around the wok/pan so they can get a light char. Once the veggies are done, set it aside 9. Next add some oil and stir fry the noodles for 2-3 mins on high heat. This enhances the taste and gives it a wok tossed flavour. Use chopsticks or tongs to mix the noodles so they don’t break 10. Once the noodles stir fried well, add the veggies and mix well 11. Pour in the sauce and stir fry for 2 mins. Taste and adjust salt if needed. Some noodle brands are saltier than others 12. Switch off the flame, add green part of green onions/spring onions and a few drops of sesame oil. Enjoy! _ SUBSTITUTES: • No scallions/spring onions? Substitute with 1 small regular onion • No oyster sauce? Add 1/2 tsp soy sauce + 1/2 tsp sugar • No dark soy sauce? Skip it. It’s mainly added for colour. Your noodles will be a lot lighter without it _ TIPS: • It’s important to not add salt to the vegetables. If you add salt they’ll release too much water and turn soggy • Stir frying veggies on high heat gives it a light char while keeping it crunchy at the same time • Different brands of noodles have different levels of salt, adjust the sauce depending taste • Use Chinese brands of sauces for an authentic taste. I use Lee kum kee sauces in this video

Today I am making stir-fried chicken chow mein easy. RECIPE LINK below! This recipe is similar to the way my local Chinese Take-Out restaurant makes it. The vegetables and sauce ingredient ratios are up to you. The noodles can be substituted with your favorite thin pasta as well. Chow mein is a staple in most Chinese restaurants and I have tried so many variations. This recipe is my recreation from one of my local spots I order take-out from.
